CIMONINO AND CAPRINOTTO
Soft paste cheeses, lightly friable, Cimonino and Caprinotto represent two Ciresa’s specialties. The hand processing and the long aging, give to these cheeses a strong and appetizing taste. Very delicious is dressed with oil and pepper.
Cimonino has a cylindrical shape, in trays of 160 and 250 g; Montanaro has a round shape in trays of 160 g. All in modified atmosphere.


GORGONZOLA AL NATURALE
Gorgonzola is one of the best known Italian cheeses in the world and it boasts the Protected Designation of Origin (P.D.O.), recognised by the E.U.. Traditional production methods and a long and careful aging give to this cheese its inimitable taste. White and firm cheese streaked with green/blue veins. Cylindrical shape, weight 12 or 7 kg, pink rind with some green mould.
Ingredients: Pasteurized full-cream cow milk, salt, rennet, min. fat 48%
Aging: about 12/14 weeks.
Keeping: at +2° to +6° C.
Packaging: whole cheeses, and 1/2, 1/4, and 1/8 of whole. The smaller size is available only as a whole 7 kg.
