| CIMONINO AND CAPRINOTTO |

Soft paste cheeses, lightly friable, Cimonino and Caprinotto represent two Ciresas specialties. The hand processing and the long aging, give to these cheeses a strong and appetizing taste. Very delicious is dressed with oil and pepper.
Cimonino has a cylindrical shape, in trays of 160 and 250 g; Montanaro has a round shape in trays of 160 g. All in modified atmosphere.

| GORGONZOLA AL NATURALE |

Gorgonzola is one of the best known Italian cheeses in the world and it boasts the Protected Designation of Origin (P.D.O.), recognised by the E.U.. Traditional production methods and a long and careful aging give to this cheese its inimitable taste. White and firm cheese streaked with green/blue veins. Cylindrical shape, weight 12 or 7 kg, pink rind with some green mould.
Ingredients: Pasteurized full-cream cow milk, salt, rennet, min. fat 48%
Aging: about 12/14 weeks.
Keeping: at +2° to +6° C.
Packaging: whole cheeses, and 1/2, 1/4, and 1/8 of whole. The smaller size is available only as a whole 7 kg.
