LATTERIA VALSASSINA
Made esclusively of cow milk from the homonymous Valley, in total respect to the ancient herdsmen's traditions. Strawy coloured cheese of firm paste with small eies. The long aging in a damp cave, gives it a strong taste. Cylindrical shape, weight 6.5 kg, yellow plastic-coated.
Ingredients: Pasteurized full-cream cow milk, salt, rennet, min. fat 45%.
Aging: about 10/12 weeks.
Keeping: at +2° to +6° C.
Packaging: whole cheese, weight 6.5 kg.


TALEGGIO AND ROBIOLA VECCHIA VALSASSINA
Taleggio Vecchia Valsassina is a typical Italian cheese whit the Protected Designation of Origin (P.D.O.), protected by the "Consorzio Tutela Taleggio" (C.T.T.). Esclusively produced in the region Lombardia.
The whole cheese is flatter than Taleggio Vero Ciresa, and for this reason the taste is very stronger. Soft cheese with square shape, weight 1.6 kg, pink rind with some green mould.
Ingredients: pasteurized full-cream cow milk, salt, rennet, min. fat 48%.
Aging: about 8 weeks
Keeping: at +2° to +6° C.
Packaging: whole cheeses only available.

Robiola is a portion of Taleggio Vecchia Valsassina not aged yet. Because of its smaller size, the taste is stronger than Taleggio.
Square shape, pink rind with some green mould.
Packaging: whole cheese of 400 g only available.
