D.O. Cheese (protected by the homonymous Consortium) it is recognized by U.E.
This cheese derives from most ancient farm traditions of our valley. It comes from the artisan processing of the raw milk. The paste is white and friable. The aging of Quartirolo Vero Ciresa is short but particular, and that gives it a typical taste, agreeably acidulous.
Square shape, weight about 1.7 Kg; light pink rind, a light natural green mould develops during the aging. Only the whole form is available.

This speciality consists in alternated layers of fresh Mascarpone and Gorgonzola Prelibato; this combination gives a soft creamy cheese, with a particular and inimitable sweet taste.
Ingredients: Gorgonzola and Mascarpone.
Keeping: at +2° to +6° C.
Packaging: parallelepiped piece of 2,2 or 1,1 kg, wrapped in silver paper, and 200 g portions (fixed weight) in plastic boxes in modified atmosphere.
