Pecorino di Sardegna is a raw, hard cheese, made from whole sheep’s milk.

Upon ripening, this cheese develops a natural, golden-yellow to dark brown rind and a crumbly paste with irregular eyes.

Pecorino di Sardegna features a compact, hard, straw-yellow to white paste.

It is characterised by a sharp aroma and it has a rich, intense flavour.
