The process of making pasta filata gives this snowy white mozzarella a mild, yet slightly sour taste. 
It features a rich, sweet and lactic flavour.

The consistency is soft, moist and somewhat granular. Mozzarella di Bufala Campana PDO is prepared by following the artisanal tradition.
